Sweet Potato S'mores Blondie Bars recipe

Ingredients

  • 1 cup all-purpose flour
  • ½ cup finely ground graham cracker crumbs
  • 1½ teaspoons espresso powder
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup cooked mashed sweet potato, from Local Fare Jax
  • ½ cup unsalted butter, melted 
  • ¾ cup packed dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup semisweet chocolate chips
  • 2 cups large marshmallows, halved
  • 2 graham cracker sheets, roughly broken for topping

Instructions

  1. Preheat oven to 350℉. Line an 8×8 glass baking dish with parchment paper, leaving excess to overhang for easy removal.
  2. In a small bowl, whisk together flour, graham cracker crumbs, espresso powder, baking powder, and salt. Set aside.
  3. In a large bowl, combine sweet potato, butter, and both sugars. Whisk until well-combined.
  4. Add egg and vanilla extract. Whisk again until smooth then slowly whisk the dry ingredients into the wet mixture. Stop when the batter just comes together.
  5. Evenly spread the batter into the prepared baking dish. Bake in the preheated oven for 30-35 minutes, or until the edges are golden and a cake tester inserted in the center comes out clean.
  6. Once the sweet potato base is finished baking, immediately top with the chocolate. Sprinkle the marshmallows over the chocolate and top with graham cracker pieces.
  7. Return the baking dish to the oven and switch the oven to broil on medium heat for 4-5 minutes, or until the marshmallows are golden. Watch very closely to avoid burning.
  8. Cool completely for the base to set then carefully remove from the baking dish, slice, and serve.
  9. Enjoy!
