Sweet Potato S’mores Blondie Bars recipe by Happy Bake Day

- 1 cup all-purpose flour
- ½ cup finely ground graham cracker crumbs
- 1½ teaspoons espresso powder
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup cooked mashed sweet potato, from Local Fare Jax
- ½ cup unsalted butter, melted
- ¾ cup packed dark brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup semisweet chocolate chips
- 2 cups large marshmallows, halved
- 2 graham cracker sheets, roughly broken for topping
Instructions
- Preheat oven to 350℉. Line an 8×8 glass baking dish with parchment paper, leaving excess to overhang for easy removal.
- In a small bowl, whisk together flour, graham cracker crumbs, espresso powder, baking powder, and salt. Set aside.
- In a large bowl, combine sweet potato, butter, and both sugars. Whisk until well-combined.
- Add egg and vanilla extract. Whisk again until smooth then slowly whisk the dry ingredients into the wet mixture. Stop when the batter just comes together.
- Evenly spread the batter into the prepared baking dish. Bake in the preheated oven for 30-35 minutes, or until the edges are golden and a cake tester inserted in the center comes out clean.
- Once the sweet potato base is finished baking, immediately top with the chocolate. Sprinkle the marshmallows over the chocolate and top with graham cracker pieces.
- Return the baking dish to the oven and switch the oven to broil on medium heat for 4-5 minutes, or until the marshmallows are golden. Watch very closely to avoid burning.
- Cool completely for the base to set then carefully remove from the baking dish, slice, and serve.
