Watermelon & Tuna Poke Bowl

Ingredients:

  • 1 cup fresh watermelon, diced into small cubes
  • 8 oz sushi-grade ahi tuna, diced. You will typically find this frozen. (You might be able to also find ready made poke tuna kits.)
  • 1 cup cooked jasmine or sushi rice (warm or chilled)
  • ½ avocado, sliced
  • ½ cucumber, thinly sliced
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil (optional)
  • 1 tsp rice vinegar (optional)
  • ½ tsp grated ginger
  • 1 tsp sriracha or chili paste (optional)
  • Sesame seeds + furikake (optional for garnish)

Step-by-Step Chef Method:

  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, ginger, and sriracha.
  2. Toss the diced tuna and watermelon in the dressing to coat.
  3. In a bowl, layer rice, avocado, cucumber, and tuna-watermelon mix.
  4. Top with green onions, sesame seeds, and furikake if desired
