Watermelon & Tuna Poke Bowl

Ingredients:
- 1 cup fresh watermelon, diced into small cubes
- 8 oz sushi-grade ahi tuna, diced. You will typically find this frozen. (You might be able to also find ready made poke tuna kits.)
- 1 cup cooked jasmine or sushi rice (warm or chilled)
- ½ avocado, sliced
- ½ cucumber, thinly sliced
- 2 green onions, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil (optional)
- 1 tsp rice vinegar (optional)
- ½ tsp grated ginger
- 1 tsp sriracha or chili paste (optional)
- Sesame seeds + furikake (optional for garnish)

Step-by-Step Chef Method:
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, ginger, and sriracha.
- Toss the diced tuna and watermelon in the dressing to coat.
- In a bowl, layer rice, avocado, cucumber, and tuna-watermelon mix.
- Top with green onions, sesame seeds, and furikake if desired
