Cheesy Moringa Quesadillas

A sneaky greens win for picky eaters—crispy, cheesy, and totally dippable.

Ingredients:

  • 1 cup fresh moringa leaves, finely chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 4 small flour or corn tortillas
  • 1 tablespoon butter or olive oil
  • Optional: mashed black beans or scrambled egg for protein
  • Salsa or guacamole for dipping

COOKING INSTRUCTIONS

  1. Heat a nonstick skillet over medium.
  2. On one tortilla, sprinkle cheese and chopped moringa leaves (plus beans or eggs if using). Top with another tortilla.
  3. Lightly butter the skillet and cook quesadilla until golden on one side, then flip and cook until cheese melts and both sides are crispy.
  4. Cool slightly, then cut into wedges. Serve with salsa or guac.

Swap Ideas: Add chopped tomatoes, caramelized onions, or bell peppers. Use whole wheat tortillas for a fiber boost.
