Cheesy Moringa Quesadillas
A sneaky greens win for picky eaters—crispy, cheesy, and totally dippable.

Ingredients:
- 1 cup fresh moringa leaves, finely chopped
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 4 small flour or corn tortillas
- 1 tablespoon butter or olive oil
- Optional: mashed black beans or scrambled egg for protein
- Salsa or guacamole for dipping
Putting it all together
COOKING INSTRUCTIONS
- Heat a nonstick skillet over medium.
- On one tortilla, sprinkle cheese and chopped moringa leaves (plus beans or eggs if using). Top with another tortilla.
- Lightly butter the skillet and cook quesadilla until golden on one side, then flip and cook until cheese melts and both sides are crispy.
- Cool slightly, then cut into wedges. Serve with salsa or guac.
Swap Ideas: Add chopped tomatoes, caramelized onions, or bell peppers. Use whole wheat tortillas for a fiber boost.
