Cabbage and Cheese Pie by Happy Bake Day

- 1 medium cabbage, shredded, from Local Fare Jax
- 1 medium sweet vidalia onion, thinly sliced, from Local Fare Jax
- 2 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1½ cups large curd cottage cheese
- 4 large eggs
- ½ cup all-purpose flour
- 1 frozen puff pastry sheet, thawed
- 1 teaspoon water
Instructions
- Preheat oven to 375℉. Lightly grease a 9-inch deep-dish pie plate and set aside.
- Heat a drizzle of olive oil in a large skillet over medium heat. Add cabbage and onion and stir occasionally until softened. Stir-in garlic, salt, and pepper, and cook until fragrant, about 1 minute.
- Remove from heat and allow to cool.
- In a large bowl, combine cottage cheese, 3 eggs, and flour. Whisk until smooth. Fold-in cooled cabbage mixture.
- Gently roll out the puff pastry and line the prepared pie plate with the pastry. Pour the mixture over the puff pastry.
- In a small bowl, combine 1 egg and water. Whisk well. Use a basting brush to brush the egg wash over the exposed edges of the puff pastry.
- Bake the cabbage cheese pie for 35-40 minutes, or until the puff pastry is golden and the pie is set. Allow to cool slightly before serving warm. Enjoy!
