Blackberry Peach Biscuit Cobbler<br />

  • 2 cups diced peaches from Local Fare Jax
  • 2 cups blackberries from Local Fare Jax
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 3 refrigerated buttermilk biscuits
  • 2 tablespoons salted butter, melted
  • Coarse (turbinado) sugar, for sprinkling

Instructions

  1. Preheat oven to 350℉. Lightly grease a glass 8×8 baking dish and set aside.
  2. In a large bowl, combine peaches, blackberries, sugar, cornstarch, lemon juice, and vanilla. Mix well and pour into the prepared baking dish.
  3. Cut biscuits in half (like a hamburger bun) and arrange over the fruit mixture.
  4. Brush the biscuits with melted butter and sprinkle with coarse sugar.
  5. Bake the cobbler in the oven for 35-45 minutes, or until the biscuits are golden brown and the fruit is bubbling.
  6. Allow the cobbler to cool slightly and serve warm. Best paired with vanilla ice cream or whipped cream. Enjoy!
