Blueberry Balsamic Chicken with Mixed Greens Salad

Roma Tomatoes
For the Chicken portion here’s what you’ll need:
  • 4 chicken breasts, boneless and skinless
  • 1 cup blueberries
  • 4 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
Ingredients you’ll need for the Mixed Greens Salad:
  • 4 cups mixed greens (green butterhead lettuce, kale, and/or spinach)
  • 1 cup grape tomatoes, halved
  • 1 cup French breakfast radishes, thinly sliced
  • 1/2 cup fresh cut parsley, chopped
  • 1/4 cup fresh cut dill, chopped
  • 1 sweet baby Vidalia onion, thinly sliced
  • 1 cup blueberries

Instructions

Preheat your oven to 375°F (190°C). Prepare the Blueberry Balsamic Glaze: In a saucepan over medium heat, combine the blueberries, balsamic vinegar, honey, garlic, salt, and pepper. Cook, stirring occasionally, until the blueberries burst and the mixture thickens slightly, about 5-7 minutes. Remove from heat and set aside. Prepare the Chicken: Season the chicken breasts with salt, pepper, dried thyme, dried rosemary, and paprika. Sear the Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts on both sides until golden brown, about 2-3 minutes per side. Glaze and Bake the Chicken: Brush the blueberry balsamic glaze over the seared chicken breasts, reserving some for later. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Prepare the Mixed Greens Salad: In a large mixing bowl, combine the mixed greens, halved grape tomatoes, thinly sliced French breakfast radishes, chopped fresh parsley, chopped fresh dill, thinly sliced sweet baby Vidalia onion, and blueberries.
You’re ready to serve!
Arrange the glazed chicken breasts on a serving platter. Drizzle with the remaining blueberry balsamic glaze. Serve alongside the mixed greens salad. Enjoy your Blueberry Balsamic Chicken with a refreshing mixed greens salad!
