Cinnamon Applesauce Donuts

Ingredients For the applesauce:
- 4 medium NC Apples from Local Fare Jax, peeled, cored, and chopped
- ½ cup water
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of salt
Ingredients For the donuts:
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup homemade cinnamon applesauce (from above)
- ¼ cup dark brown sugar
- 2 tablespoons honey
- 1 large egg
- ⅓ cup whole milk
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
Ingredients For the topping:
- 3 tablespoons unsalted butter, melted
- ⅓ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Make the applesauce: In a large saucepan, combine apples, water, lemon juice, honey, cinnamon, nutmeg, and salt. Bring to a simmer over medium heat.
- Reduce heat and cover for 20-25 minutes, stirring occasionally, or until apples are soft.
- Pour the apple mixture into a blender or use an immersion blender to blend the applesauce into a smooth texture. Transfer to a bowl and cool completely.
- Make the donuts: Preheat oven to 350℉. Lightly grease a standard 12-count donut pan and set aside.
- In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until well combined.
- In a separate bowl, combine applesauce, brown sugar, honey, egg, milk, butter, and vanilla. Whisk well.
- Slowly add the dry ingredients into the wet. Whisk until smooth and just combined.
- Spoon the batter into the donut pan, filling the donut cavities ¾ full. Bake the donuts in the preheated oven for 12-14 minutes, or until the donuts spring back to the touch.
- Make the topping: In a small bowl, combine cinnamon and sugar. Mix well.
- Invert the donuts onto a wire rack. While warm, use a basting brush to brush the donuts with butter and toss into the cinnamon-sugar mixture. Return to the wire rack to cool completely.
