Blackberry Peach Biscuit by Happy Bake Day

- 2 cups diced peaches from Local Fare Jax
- 2 cups blackberries from Local Fare Jax
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 3 refrigerated buttermilk biscuits
- 2 tablespoons salted butter, melted
- Coarse (turbinado) sugar, for sprinkling
Instructions
- Preheat oven to 350℉. Lightly grease a glass 8×8 baking dish and set aside.
- In a large bowl, combine peaches, blackberries, sugar, cornstarch, lemon juice, and vanilla. Mix well and pour into the prepared baking dish.
- Cut biscuits in half (like a hamburger bun) and arrange over the fruit mixture.
- Brush the biscuits with melted butter and sprinkle with coarse sugar.
- Bake the cobbler in the oven for 35-45 minutes, or until the biscuits are golden brown and the fruit is bubbling.
- Allow the cobbler to cool slightly and serve warm. Best paired with vanilla ice cream or whipped cream. Enjoy!
