Cyclospora Outbreak Update
You may have seen the latest headlines about a produce-related Cyclospora outbreak linked to iceberg lettuce sourced from central Mexico (via Taylor Farms) and distributed through a large industrial, multistate supply chain traveling across thousands of miles.
Cyclospora is a microscopic parasite that has contaminated produce when human waste enters agricultural water, irrigation systems or areas where food is grown, harvested or handled.
“The parasite originates in human waste, but it does not become infectious immediately. It must remain in the environment for at least one to two weeks to mature. If contaminated water then comes into contact with fresh produce, the parasite can cling to the food and eventually make its way into someone’s digestive system. It can cause frequent watery diarrhea, stomach cramps, nausea, loss of appetite, weight loss and extreme fatigue and symptoms may last for weeks if the illness is not treated.”
