Unstuffed Cabbage Casserole
Makes 6 servings
3 Tablespoons Oil
1 Lb Ground Beef
1 Sweet Onion, (chopped)
1 Orange Bell Pepper, (seeded, chopped)
3 Garlic Cloves, (chopped)
14 oz Can Fire Roasted Diced Tomatoes
1/2 teaspoon Smoked Paprika
1/2 teaspoon Dried Oregano
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
Salt/Pepper, (to taste)
1 Small Head Green Cabbage, (cored, chopped)
2 Cups Shredded Cheddar/Jack Cheese
Instructions
Saute oil, beef, onion and orange pepper over medium/high in large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
Add garlic and saute 1 more minute.
Stir in tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook 15-20 minutes or until cabbage is tender.
Top with cheese, cover until melted then serve.

Yellow Squash Soup
Makes 4 servings

3 Tablespoon unsalted butter

½ cup chopped sweet onion

2 garlic cloves chopped
-
4 medium yellow squash ends removed and chopped

½ teaspoon dried thyme
-
¼ teaspoon ground nutmeg
-
¼ teaspoon kosher salt or to taste
-
2 cups chicken broth vegetable broth
-
2 Tablespoon heavy cream
-
Pepper to taste optional
Instructions
Melt butter in a large heavy bottomed pot over medium heat. Add onions and garlic and sauté for 5 minutes, or until the onions have softened.
Add squash, thyme, nutmeg and salt and stir and continue to cook for an additional 10 minutes, stirring occasionally.
Add broth and increase the heat to medium high and bring mixture to a boil. Allow mixture to boil for about 10 minutes, until squash is softened.
Remove from heat and add contents to a blender. Blend until smooth.
Add in heavy cream. (Salt and pepper to taste)
Serve and enjoy.

Boursin Cheese Pasta
Makes 2-4 servings

3–4 tablespoons olive oil

2 cloves minced garlic
-
Seasonings: salt, pepper, oregano, and onion powder

1 package Boursin cheese (I used garlic and herb, but you can use any flavor.)

2 cups cherry or grape tomatoes
-
1 cup dried pasta
Instructions
Set oven to 400°F.
In a small bowl, combine olive oil, garlic, and seasoning. Mix and set aside.
Place the entire block of Boursin cheese in the center of a baking dish. Add tomatoes around the cheese. Pour oil and seasoning mixture over the cheese and tomatoes. Bake for 30 minutes.
While the cheese and tomatoes bake, prepare your pasta according to the package instructions. Drain and set aside.
When cheese and tomatoes are finished baking, stir them together to create a creamy sauce. Taste sauce and add more seasoning, accordingly.
Add sauce to pasta and enjoy.
