Squash Galette Recipe by Happy Bake Day
Ingredients
- ½ cup whole milk ricotta cheese
- 1 large egg
- 1 teaspoon olive oil + extra for drizzling
- 1 teaspoon lemon juice
- ¼ teaspoon salt + extra for sprinkling
- ⅛ teaspoon ground pepper + extra for sprinkling
- 2 tablespoons thinly sliced scallions
- ½ tablespoon fresh dill, chopped
- 2 sheets frozen puff pastry, thawed
- 1 teaspoon water
- 1 large zucchini from Local Fare Jax
- 1 large yellow squash from Local Fare Jax
Instructions
- Preheat oven to 400℉. Line a baking tray with parchment paper and set aside.
- In a food processor, combine ricotta, 1 teaspoon olive oil, lemon juice, salt, and pepper.
- Scramble egg in a small bowl. Pour half of the scrambled egg into the food processor and set the other half aside. Pulse the food processor on high speed until the ricotta mixture is smooth.
- Fold the scallions and dill into the whipped ricotta and set aside.
- Roll out the puff pastry and cut ½ inch of the pastry off the edges. Set the scraps aside.
- Combine remaining scrambled egg and water and whisk well. Use a basting brush to brush a thin border of the egg wash around the puff pastry. Replace the scraps over the egg, creating a “picture frame”. Brush the edge again with egg wash.
- Thinly slice the zucchini and squash, about ⅛-inch thick. Slice the cherry tomatoes in half, length-wise.
- Divide the ricotta mixture between the two pastries, and evenly spread the mixture along the bottom of the puff pastry, in the center of the frame.
- Divide the tomato halves between the two pastries, and place the tomato halves in the center of the ricotta mixture. Alternate laying the zucchini and squash slices around the tomatoes. Cover the ricotta mixture but do not cover the frame border.
- Drizzle the vegetables with a little olive oil then sprinkle with salt and pepper, to taste.
- Bake the galette in the oven for 20-25 minutes, or until the pastry is puffed and golden and the vegetables are soft.
- Allow to cool for 5 minutes on the baking tray. Slice and serve immediately. Enjoy!
