Cinnamon Maple Roasted Sweet Potato

4 cups sweet potatoes, peeled and diced (about 2 large sweet potatoes)

Instructions
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Dice the Sweet Potatoes: Peel and dice the sweet potatoes into 1-inch cubes for even cooking.
Season the Sweet Potatoes: In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper. Mix well to coat evenly.
Spread on Baking Sheet: Arrange the sweet potatoes in a single layer on the prepared baking sheet to ensure even roasting.
Roast in the Oven: Place in the preheated oven and roast for 30-35 minutes, turning once halfway through, until the sweet potatoes are tender and caramelized.

Broccoli Fritters

2 cups broccoli florets steamed and finely chopped

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour or almond flour for a low-carb option

1 clove garlic minced

1/4 cup green onions finely chopped

Instructions
Steam the Broccoli: Steam the broccoli florets until tender, about 4-5 minutes. Let them cool slightly, then finely chop.
Mix the Ingredients: In a large bowl, combine the chopped broccoli, Parmesan cheese, flour, eggs, minced garlic, green onions, salt, and black pepper. Stir until everything is well combined and a thick batter forms.
Form the Fritters: Using your hands or a spoon, shape the mixture into small patties or fritters, about 2-3 inches wide.
Heat the Oil: Heat about 2 tablespoons of olive oil in a large skillet over medium heat.

Garlic Parmesan Green Beans

1 lb green beans, ends removed

1 tbsp avocado oil (or other cooking oil)

½ tsp sea salt

½ tsp freshly ground black pepper

4 cloves of garlic, minced

½ cup grated parmesan
-
4 lemon wedges for serving (optional)
Instructions
Preheat your oven to 425F (220C).
Add the green beans to a large baking sheet.
Drizzle them with avocado oil and toss to coat.
Roast the green beans in the preheated oven for 15 minutes.
Take them out, sprinkle with minced garlic and parmesan, and toss to coat.
Roast for 10 more minutes until the cheese is golden and crispy.
Serve immediately and enjoy!
