Apple & Grape Hand Pies Recipe by Happy Bake Day
Ingredients
- 2 tablespoons unsalted butter
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 4 green apples from Local Fare Jax, diced
- ½ cup green Scuppernong grapes from Local Fare Jax, halved & seeds removed
- ¼ cup granulated sugar
- 2 tablespoons light brown sugar
- 2 tablespoons whole milk
- 1 teaspoon vanilla extract
- 1½ tablespoons cornstarch
- 1 tablespoon water
- 2 premade pie crusts
- 1 large egg
- Turbinado (coarse) sugar, for sprinkling
Instructions
- Preheat oven to 425℉. Line two baking trays with parchment paper and set aside.
- In a large saucepan, add butter, cinnamon, and salt. Warm over medium-low heat and stir until melted and combined.
- Add apples, grapes, granulated sugar, light brown sugar, milk, and vanilla. Mix well. Cover and cook, stirring occasionally, until apples start to soften.
- Combine cornstarch and water in a small bowl. Mix until a thick paste forms. Add paste to the apple mixture and stir.
- Continue stirring, slowly, and constantly until the apples are soft and the filling has thickened then let bubble for 1 minute. Remove from heat and let cool.
- Roll the pie crust onto a flat surface and cut into quarters. Transfer the cut pieces to the prepared baking trays.
- Spoon some of the apple filling into the center of each pie crust piece, careful to leave plenty of room around the edges.
- Fold the filled pie crust in half. Use a fork to crimp the edges to seal them closed.
- Scramble the egg in a small bowl. Use a basting brush to brush a thin layer of egg over each hand pie. Sprinkle with turbinado sugar. Cut a small slit at the top for venting.
- Bake the hand pies for 20-25 minutes, or until the pie crust is golden brown.
- Allow to cool on the baking tray for 5 minutes, then transfer to a wire rack to cool for at least 5 minutes more. Best served warm. Enjoy!
