Yellow Squash Casserole

Ingredients:
- 4 cups yellow squash, sliced
- 1 medium onion, chopped
- 2 tablespoons butter
- 2 eggs, beaten
- 1/2 cup milk (Raw milk available in the store)
- 1 cup shredded cheddar cheese
- 1/2 cup bread crumbs
- Salt and pepper, to taste (Salt and pepper available in the store from FreshJax)
- Additional bread crumbs and cheese for topping
Preheat Oven and Prepare Squash:
Preheat your oven to 350°F (175°C). Boil the sliced squash and chopped onion in water for about 5 minutes, then drain well to remove excess moisture.
Mix Ingredients:
In a large bowl, combine the cooked squash and onion with butter, beaten eggs, milk, shredded cheese, and bread crumbs. Season with salt and pepper.
Prepare the Baking Dish:
Grease a baking dish and transfer the squash mixture into it. Spread evenly.

Add Toppings:
Sprinkle additional bread crumbs and cheese on top for a crispy, golden crust.

Baking Instructions
Bake:
Place in the oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is set.
Serve:
Let it cool for a few minutes before serving. This casserole makes a hearty side dish or a vegetarian main course.
