Southwest Slaw | The Perfect Summer Side!

Roma Tomatoes

Ingredients:

  • 1 1/2 cup sour cream
  • 3 tbsp fresh lime juice
  • 1 tbsp fresh lemon juice
  • 2 tbsp FreshJax taco seasoning
  • 1 bag (16 oz) tri-color coleslaw mix or your choice of fresh cabbage
  • 1 diced orange bell pepper or Cubanelle Peppers
  • 1 1/2 cups vine ripe tomatoes
  • 1 can (15.25 oz) black beans, drained and rinsed
  • 3 Cobs of corn. Shucked. Boiled, roasted or blackened.
  • 1 jalapeno, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • Salt and fresh ground black pepper to taste (or try VamPepper Garlic Blend

If you want to make your own taco seasoning:

  • 1 tablespoon chili powder

  • 1 ½ teaspoons ground cumin

  • ½ teaspoon ground paprika

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • ¼ teaspoon crushed red pepper flakes

  • ¼ teaspoon dried oregano

Instructions

  1. In a large bowl combine sour cream, lime juice, lemon juice and taco seasoning. Mix well.

  2. Cut corn kernels off cob.

  3. Add coleslaw and continue to mix.

  4. Once coleslaw is evenly coated, add remaining tomatoes, onions, jalapeños, corn, and black beans. Gently mix.

  5. Tip: Make sure you add black beans last to avoid smashing.

  6. Season with salt and pepper.

  7. Garnish with chopped cilantro and a few lime wedges.

  8. Cover and refrigerate for 30 minutes. Best served chilled.

Pairs well with Old Florida Tortilla chips.
