Simple Sausage Hash

Ingredients:
- 1 large or 2 small potatoes
- 1 to 2 Cubannelle or green bell peppers
- 1/4 to 1/2 onion
- 2 Jalapeno & Cheddar Sausage Links
- 2 to 4 eggs
- Medium bacon salsa
- Sour cream
- Sweet Grass Thomasville Tomme Cheese
- Herbs for serving
- Salt and pepper to taste
~ 2 tbsp cooking fat of choice (beef tallow)
Instructions
Part 1:
- Preheat a cast iron skillet with a little bit of beef tallow over medium-hight heat.
- In the meanwhile, core and chop peppers and finely dice the onion. Peel and dice the potatoes into small even cubes.
Part 2:
- Add sausage links to the skillet and start breaking into smaller pieces using a metal spatula. Cook for a couple minutes, add onions and peppers.
- Cook for 5-7 minutes, mixing occasionally. Set aside.
Part 3:
- In the same skillet, add enough cooking fat to cover the bottom.
- Next add the potatoes.
- Cook for 10-15 minutes, flipping potatoes about every 3-5 minutes. *Don’t move the potatoes around too much.
- Cook until crispy on the outside and soft on the inside.
- Season with salt and pepper towards the end of cooking time.
Part 4:
- Add the sausage mixture back into the skillet and mix everything together.
- Crack a few eggs on top and season with salt.
- Cover with a lid and cook until the eggs are set, for about 3 minutes.
Serve with toppings of choice. Enjoy!
